Butterfly

chicken Here is what I wound up making for dinner. A salad to go along with the
chicken. First I butterflied the chicken breast and than flatten the wings
out with a bottle. Than I layered some thin sliced ham on the chicken. Added
some cheese, and some peppers and onions  I didn't use on the pizza I made
for company a couple days ago. Than layered another layer of ham. Flipped the other wing over
and use toothpicks to hold the two wings together. Than dusted the chicken
with a little flour, dipped the chicken in a egg wash and breaded the
chicken with Italian bread crumbs. Put it in the refrig. When my wife  gets
home, I will add a little olive oil and equal amount of butter and fry the
breast about 6 minutes on both sides. With the salad, that will have to do.
