One thing that might be helpful is to use a deep skillet, or large pot if you 
don't have that.  You will then have room to stir the meat without fear of 
spilling it all over the stove.  A good sturdy wooden spoon helps too.

As ground meat browns, it begins to separate and feel granular.  It also firms 
up and will feel dry.  It will sizzle less also.  Cook the meat on medium high 
so it will brown; it should take about ten minutes, depending on how much meat 
you are cooking.
