Use chicken breast or ground chicken.
If breast, cut the chicken into 1 inch strips.
Fry up the chicken. If using breast, dust the strips with flour with a little black pepper mixed in. Put a the flour and pepper in a plastic grocery bag and throw in the chicken and shake.
Now the breast or ground chicken is fried, set aside.
Cook the rice, I like brown rice, but the recipe calls for white, which I seldom use. As the rice is cooking. Slice up a onion into thin onion slices and cut a sweet pepper into strips. Add some chopped fresh garlic cloves, salt, pepper
Set aside.
add a couple tablespoons of butter in the skillet, melt it and add 3 or 4 tablespoons of flour. Brown the flour well. For we are going to make a rue. Get out a 14 1/2 ounce can of chicken broth and gently add to the rue, stirring to incorporate the flour into the broth, leaving a smooth gravy. Add a little water if gravy is to thick to thin it out as you prefer. Add the onion/peppers back into the gravy and heat thru. add 1 tablespoon of paprika Now blend the gravy with a hand blender or blender until onions/peppers are incorporated into it. Add the chicken back into the gravy and heat thru.Place the rice in a bowl and ladle the gravy over the rice and enjoy. RJ
