Old Fashion Coconut Egg Pie
1 1/2 cups sugar
1 tablespoon flour
3 eggs, slightly beaten
1/2 cup melted butter
1/4 cup buttermilk
1/2 cup coconut
1 teaspoon vanilla
1 pie shell
Mix sugar, flour, eggs, butter, buttermilk, coconut and vanilla. Pour into pie 
shell. Bake at 350 degrees until brown and set, about 25 minutes.

Mexican Corn
1 (16 ounce) package frozen corn, thawed
1/2 cup thick and chunky salsa
1/4 cup sliced ripe olives
Cook corn according to package directions. Stir in salsa and olives. Cook until 
hot. Drain.

Hurry Up Main Dishes
Veal Parmesan
1 pound veal round steak, 1/2 inch thick
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
1 egg
1/3 cup salad oil
3 tablespoons water
1 can (8 ounces) tomato sauce
1/2 teaspoon oregano
Cut meat into 4 serving pieces; pound until 1/4 inch thick. Stir together bread 
crumbs, cheese, salt, pepper and paprika. Beat egg slightly. Dip meat into egg, 
then into crumb mixture, coating both sides. Heat oil in large skillet. Brown 
meat on both sides, about 6 minutes. Reduce heat. add water; cover and simmer 
30 to 40 minutes, or until meat is tender. If necessary, add small amount of 
water. Remove meat from skillet; keep warm. Pour tomato sauce into skillet; 
stir in oregano. Heat to boiling and pour over meat.
Serve on hot cooked spaghetti that has been tossed with butter; pass more 
grated Parmesan cheese.
Makes 4 servings.
