It means moisture got into it some how. And it all depends how hard the lumps. If one can take their fingers and pinch the flower back into powder form, you can use it. I am not sure about this but today I was making bread. and the flour had lumps in it. the flour was bread flour. I decided not to use it and used all purpose flour instead because that was the last of the bread flour. I was wondering if when the flour has lumps in it does that mean it is time to replace it?

instead of water, I used orange juice. I have done this before. I also put a fourth tsp of orange zest in it. This gives it a slight orange taste but does not over power it. with the sugar in the orange juice I think it helps activate the yeast. mabey I am wrong about activating the yeast but I have had success in the past with it. now that I have said that, It probably won't work this time.
