HEART HEALTHY APPLE OAT BREAD

 

Ingredients:

1 1/2 cups quick cooking old fashioned oats, uncooked

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking soda

1 1/2 teaspoons ground cinnamon

3/4 teaspoon ground allspice

1/2 cup honey

1/2 cup skim milk

1/4 cup salad oil

3 egg whites

3 medium diced unpeeled green cooking apples (about 1 1/4 c. diced)

 

Directions:

1.      Preheat oven to 350 degrees. Spray 8 1/2 x 4 1/2 inch loaf pan with
vegetable cooking oil. 
2.      In large bowl mix oats and next 4 ingredients until well combined;
set aside.
3.      In small bowl beat honey, milk, oil and egg whites until blended;
stir into flour mixture just until moistened (batter will be lumpy). Fold in
apples. 
4.      Spoon batter evenly into loaf pan. Bake 65 minutes or until a
toothpick inserted in center of bread comes out clean. Cool in pan 10
minutes. Remove to wire rack.
