Sherri, I make this quite often. I usually just use either frozen corn or a can of nibblets corn, depending on what I have here. Sometimes, I'll even throw in a can of mushrooms. I like my shepherd's pie with veggies, because, then I have a one dish meal. and I don't like it dry. I don't measure the mashed potatoes. Shepherd’s Pie
1 pound ground beef. Garlic and onion may be added if desired. Your choice of canned or frozen vegetables. Mushrooms, peas and carrots, and/or corn. 1 can of beef gravy or cream of mushroom soup. Mashed potatoes. Salt and pepper to taste. Fry hamburger with garlic and onions. Drain grease. In a casserole dish or 9 by 13 pan, place meat and layer vegetables on top. Spread gravy or soup over vegetables. Place mashed potatoes on top of liquid.
