Okay, the two temperature gradients aren't the same. When you heat the crock you're applying a lot of heat quickly. Cooling off earthenware and food is slower. I would not even consider leaving food in a crock pot out for forty five minutes at room temperature, as that puts the food in the "danger zone" for too long, which means there's a possibility for harmful bacteria to breed. The best tactic, of course, is to portion out the stuff in the crock pot into what's going to be eaten now and what's going to be for future meals. This also frees up your crock to use for another meal, which is handy because they do so much it's useful to have them clean.
