I made up this muffin recipe today, which to my amazement turned out really 
good. It has most of the basics in a bran muffin with extras and alterations. I 
used a wooden spoon to mix it up and unlike most directions I mixed it up well 
leaving no lumps.    
Shannon's Bran Muffin Recipe 

3 cups bran cereal 
1 cup water 
1/2 cup oil 
I heated in microwave for 2 minutes 
Cool slightly, then I added
3/4 cup brown sugar 
2 large eggs 
3 teaspoons baking soda 
1/4 teaspoon salt
1 cup almond milk 
1/4 cup sour cream
Then I alternately add:
1 cup sour milk with 
1/4 cup ground flax and
2 cups whole wheat flour 
I covered the bowl with plastic wrap and left it on the cupboard for about 30 
minutes.
Next I put the oven rack in the middle of oven and set oven to 350.
I filled my muffin papers 3/4 full.
It took exactly 18 minutes for muffins to cook and I got 21 large muffins. 
Moist and packed with fibre
