I do the same and would rather be safe than sorry; old motto kicks in here!
If in doubt, throw! it! out!
My bread of preference is Mrs. Baird's Honey 7 Grain Bread, and I can tell,
first, by aroma, if it is about to start going bad! It has this alcohol
smell, then a moist feeling to the bread around the crust, and underneath
some of the pieces. If I hesitate, don't eat it, but wait a day or two, sure
enough! it has green molded! If you do not suspect, and happen to make a
sandwich, one bite, and you'll know and be spitting it into the trash! same
with cheese! taste awful! 
A tip: when it is humid, I stick a half sheet of paper towel inside of the
plastic bag, and it helps. also, keeping the bread in the fridge helps it
last longer.

Hi. I am sure I throw out more food than I need to, and I'm wondering if
anyone has any tips on how you can tell if things like bread are moldy. I go
by smell and touch, but that isn't always a guarantee. Thanks for any
