In Canada we are celebrating Victoria Day which marks the beginning of our 
summer holidays.  It is named after Queen Victoria.
In honour of this past Queens empire here is a recipe for Empire Cookies.

Empire Cookies



2, 1/2 Cups flour

1/4 tsp baking soda

1/4 tsp cream of tartar

pinch of salt

2 tablespoons custard powder

Blend above ingredients together.

½ cup soft butter

½ cup vegetable shortening

1 egg

3/4 cup white sugar

Cream above ingredients together.

Add blended flour to creamed ingredients.

Dough becomes stiff and should not be sticky.



Form 2 large disks.

Roll one disk into 1/4 inch thickness and use a circle or crinilated edge 
circle cookie cutter shape.

Place cut shapes onto ungreased cookie sheet about ½ inches apart. .

Bake at 350 for 10 minutes.

You want the cookie to have a very light golden appearance almost white.

Let cool.



Sandwich two cookies together with thin layer of raspberry jam. 
Approximately ½ teaspoon of jam depending on your cookie circle size.

Prepare an icing sugar glaze.

Coat top cookie and place a gold or silver ball in the cookie center.

Let icing harden before storing in sealed container and place in fridge.
