Quinoa is a seed that many call a grain. Most people either over cook or under cook this product. I found the best results is to rinse quinoa first in a fine screen strainer under cold water and let it set for 5 to 10 minutes. Than put it in a little less than two cups of water, (14 1/2 ounces) or one can of chicken broth or equal amount. A dash of salt and bring the quinoa to a boil with a tight lid on the pan. Turn the quinoa down to a very low simmer and cook for another 15 minutes. Take the quinoa off the burner, remove the lid, and place a towel over the pan and let it rest for another 10 minutes. The quinoa will turn out smooth, not over done or under done.

P. S. The reason I rinse the quinoa first, is because it rinse off the coating that can give it a bitter taste.
