Chopped up a large onion
2 sticks of celery
1 large carrot
Add 1/2 cup of olive oil to a large pot
Sauté the vegetables with a couple cloves of garlic chopped. Add some fresh oregano, basil, plus some fresh ground black pepper
Add 8 cups of water, and 3 or four tablespoons of chicken bullion
2 cups of dried northern beans and cooked until the beans were soft and had a great meal. Did I say, I sprinkled some red wine vinegar over the beans just before eating. RJ.
