Tomorrow I am going to see if I like soaked brown rice.
For 2.
1/2 c brown rice (I am using the short grain)
1 c warm water
1 tablespoon of apple cider vinegar
a pinch of sea salt.
In the morning I will be draining the above after soaking over night and than rinsing the rice in a strainer. Will place the rinsed rice in 1 cup of boiling water, bring it back to a boil and than cover with a lid and turn the heat down to a very low simmer. In about twenty-five minutes the rice should absorb the liquid. It shouldn't take much longer than that. Next I will take a apple and slice it thin as I melt a tablespoon or two in a skillet and cook the apples until tender (I think 5 to 8 minutes should do the trick) Think I will add some sliced almonds or walnuts to the apples as they cook. When the apples are the way I like them, I will add the rice and a 1/2 teaspoon of ground cinnamon. Mix it all well and serve hot.
