Nothing better than a big bowl of Cuban black bean soup and fresh baked
cornbread right off the grill.
Now I don't like sweet cornbread, so I never buy the ready mixed stuff.
Instead
1 cup of corn meal
1 cup of all purpose flour
1 tbls baking powder
1 tsp baking soda
1 tbls sugar (optional)
3 tbls powdered butter milk
1 egg
1/4 cup of canola oil ( I use less)
1 cup of water, you can use milk if you must.
Blend in the dry ingredient, add the egg and oil, (I mix the two together
before adding to the Flour).
Now add 1 cup of cold water and use a Wisk to blend everything well.
Pour into a greased 8 inch cast iron skillet.
Bake @ 375 for 25 minutes or until done.
P. S.
If one has a sweet tooth in the family, pour a little honey over bread right
after taking it out of the grill or oven.
