Hey everyone,
A couple of people have requested the raw brownies recipe, so here it is. You can find the original at http://www.therawtarian.com/raw-brownie-recipe Im the sort of cook who makes something from an original recipe once, or I read a combination of recipes and create something based on that, and then I generally make up my own recipe once Ive got the hang of it. So often, my dishes are never the same every time. Heres my version of raw brownies, with a couple of variations. 2 cups dates (fresh if you can. Removing the pips is a little time-consuming but fresh dates are much nicer than dried. If you are using dry dates, however, it mightnt hurt to soak them in a bit of hot water for a while so they are softer to process). 2 cups of nuts, I usually go with 1 cup almonds and 1 cup of pecans or cashews as Im not such a fan of walnuts. ½ cup raw cacao powder. You can use processed coco but the raw stuff is amazing. Pinch of sea salt Method Grind nuts in a food processor until they are quite fine, like flour. Add cacao and salt, and process a bit more until combined with nuts. Add dates and continue processing until mixture is well combined. Press into brownie or slice tin and chill in the fridge for a couple of hours. Im lazy and dont like cutting slice/brownies, so for convenience sake I either roll the mixture into small balls, or press into small cilicone muffin moulds and place these on a tray. This should make about 24 servings. If you dont have a food processor, you may be able to grind up everything in small quantities in a stick blender with a grinder blade attachment, then mix everything up by hand. Will just be a little more time consuming. If you want a bigger mixture or you want to make it sweeter, vary the flavour etc, you can add things like coconut, honey or maple syrup, raw cacao butter (not too much as you dont want greasy mixture), or nut butters like almond butter or brazille nut butter. Happy experimenting, Lauren _______________________________________________ Cookinginthedark mailing list [email protected] http://acbradio.org/mailman/listinfo/cookinginthedark
