    Company Chicken

this recipe will feed four.


I package of Uncle Ben's Wild and white rice (175 grams)
4 boneless. skinless chicken breasts pounded and marinated in lemon juice 
overnight
    3 tbsps. butter, olive oil to cover bottom of frying pan
I can mushroom soup
3/4cup dry white wine (I used whipping cream instead)
2 tsp lemon juice
1/2 cup chopped onions,
1/2 package sliced fresh mushrooms


Prepare rice according to package directions
Brown chicken breasts in butter and olive oil for 5-10 minutes a side, Set 
pan aside.
Put rice in bottom of casserole dish or  Pyrex dish
Put chicken breasts on top of rice


Sauce
Add onions and mushrooms to drippings in chicken frying pan.  If needed, add 
2 tbsp. butter or oil, and brown till tender.
Add soup and wine or cream and stir until smooth
Pour sauce over chicken.  You can put the chicken/rice casserole in the 
fridge overnight if you want.
Bake covered at 350' for 1/2 an hour, then uncover and bake 20 - 30 minutes 
more until bubbly and browned
Let sit covered for 5 minutes, then serve.
