This appetizer was brought in for our lunch by one of our members of our
cooking group.
Artichoke Bites From Anne Jewell
These small squares taste like crustless artichoke quiche. They are good
served warm or cold.
2 jars (each 6oz/ 170 ml) marinated artichoke hearts
1 onion, finely chopped
1 large clove of garlic minced
4 eggs, well beaten
¼ cup fine dry bread crumbs or 50 ml
½ tsp salt or 2 ml
¼ tsp dried oregano
Tabasco sauce
Freshly ground pepper
2 cups grated old cheddar cheese (500 ml)
Measure ¼ cup of marinade from jar of artichokes and pour in to medium
skillet. Discard remaining marinade from jars and chop artichoke in to ½
inch pieces. Heat marinade in skillet and cook onion and garlic until soft
about 5 minutes.
In a medium bowl, beat eggs; stir onion / garlic mixture, bread crumbs,
salt, oregano, a few drops of Tabasco, and pepper to taste. Add cheese, then
artichokes.
Spoon in to a buttered 8 inch or (2 ll) square baking dish.
Bake in 325 degree F (160 degrees C) oven for about 30 - 35 minutes or until
set.
Let cool for few minutes, then cut in to squares and serve. (Can be prepared
a day or two in advance and reheated. If baked in a metal pan, removed from
pan as soon as cool, and store, wrapped in plastic, in refrigerator.). Makes
about 24 squares.
