Hi Nancy, Potato Kugel is delicious! It's a giant potato pancake that
you bake in the oven! Then, yuou cut it into wedges and serve with
sour cream! Yummm - I'm starving!
Here's how I make it. The recipe is from "The Vegetarian Epicure," and
I've been making it for many years.
POTATO KUGEL
1. Grease a 9" pie pan with oil. Place in oven (preheated to 350)
while you make this batter in your blender.
2. In blender container, place the following ingredients:
2 eggs,
1 medium onion, quartered,
2 large baking potatoes, cubed,
1 tsp. salt,
Pepper to taste.
3. Whirl at high speed until pureed, then through the top, with motor
running at high speed, drop in 2 more large baking potatoes, cubed.
4. When all is well combined, pour into hot oil in pie pan, and bake
at 350 for 45 minutes to one hour.
5. Cut into wedges and serve hot with dollops of sour cream on top.
