I make them all the time. If you use wooden skewers soak them or they may catch on fire I me rinsed the meat in olive oil, salt, pepper, lemon juice, oregano, cumin, lots of garlic and yogurt. I don't have amounts because I don't measure. Sometimes I don't use yogurt but use soy sauce. Mustard also works well.
