Sugar's Candied Sweet Potatoes

2 cups Brown or white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 pinch salt
1/2 cup butter
3 cans,15 ounce sliced or chuncks sweet potatos, or yams,drained
1 tablespoon vanilla extract
1/2 cup pineapple rounds,sliced
2 table spoon of the juice of pineapple
6 ounce chopped pecans
 
In a small bowl, mix the sugar, cinnamon, nutmeg,salt and Butter together.
Melt
together in a large skillet over medium heat; add sweet potatoes,then add
pecans and stir to
coat.
Smash them a bit so you have more and all the flavors are spread through
evenly.
Cover skillet,and reduce heat to low. Cook, stirring occasionally, for 15-20
minutes, or
until the sauce is dark and the potatoes are candied. They should be tender,
and all ingrediants have been distributed evenly.
Serve while still hot or warm.
Also taste great served as a cool dessert.
