Persimmon Cookie Recipe - Gluten Free & Sugar Free
 
Finding a dessert with no sugar that tastes good is quite a challenge.  When
you can also skip wheat, you're really challenged.  Here is a recipe that I
love and hope you will too.

1 cup persimmon puree
1/2 cup softened butter or coconut oil
1 egg
2-3 drops stevia leaf extract
1 tsp vanilla
2 cups almond flour or almond meal
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger or a chunk of minced fresh ginger
1/2 cup walnuts
3/4 cup raisins

Mix the wet ingredients together and then add in the dry ingredients and mix
well.
Stir in nuts and raisins.
Spoon onto a greased cookie sheet.
Bake in a preheated oven at 375 degrees for 20 minutes.
