I heard about these on the news, and in a newspaper article. August is hatch pepper month; I would like to know how to use them. I know you could roast them, or buy them already roasted, but are there different levels of hotness to these peppers, meaning, can you get mild ones, and are they canned, and how to use them and are they as I said different degrees of hotness? if any one has a recipe, that also would be appreciated, or some quick ideas. thanks. Sandy
