BEST BISCUITS
2 cups all-purpose flour
3 teaspoons baking powder
1/3 cup butter, softened
2/3 cup plain yogurt
Preheat oven to 425 dg. F. Sift flour and baking powder
together 3 times into a bowl. Cut in softened butter with a
pastry blender or 2 knives until the mixture is the consistency
of coarse crumbs. Add the yogurt and stir with a fork to form a
stiff dough. Drop by heaping tablespoons onto greased baking
sheet-close together for soft-sided biscuits, or 1 inch apart for
crusty ones-or gently form dough into a ball and put on a lightly
floured surface. Knead lightly with fingertips 10 to 15 times.
Roll dough 1/2-inch thick. Cut with a floured biscuit cutter or
knife. Place on baking sheet as described above. Bake about 15
minutes, or until biscuits are golden brown. Makes about 18
biscuits.
