THE FIBER FACTOR
SOLE FLORENTINE

Serves 8.

INGREDIENTS:

1 10-OZ package frozen chopped spinach.
2 TBLS Margarine.
1 Cup mushroom slices.
½ Cup green onion slices.
1-1/4 Cup Quaker Oats Bran cereal (uncooked),or Quaker oats (uncooked).
1 Egg, beaten.
1 TSP salt.
¼ Cup lemon juice.
8 Sole or Flounder fillets.
Paprika.

DIRECTIONS:
Thaw spinach reserving liquid.
Heat oven to 375 Degrees.

In a skillet melt margarine. Sauté mushrooms & onions 3-4 mins. Add Oat Bran 
cereal, egg, salt, 2 TBLS lemon juice, spinach, and reserved liquid. Mix well.
Divide Spinach mixture evenly among the 8 fillets, spreading within ½-inch of 
edges..
Roll up; place seam-side down in a 13 by 9 inch baking dish.
Sprinkle with the remaining 2 TBLS lemon juice, dust with paprika.
Bake 25 mins. Or until fish flakes.
