THE FIBER FACTOR
ZUCCHINI CASSEROLE

Serves 8.

Ingredients:
3 Cups shredded zucchini.
1 TBLS vegetable oil.
½ Onion, chopped.
1-1/4 Cup Quaker Oats Bran cereal (uncooked).
1/2 Cup shredded skim milk mozzarella cheese.
1 Egg (beaten) or ¼ Cup Egg Substitute.
½ TSP Basil leaves chopped.
½ TSP Oregano leaves chopped (optional).
½ TSP salt.
¼ TSP ground black pepper.
1/3 Cup tomato sauce.

Directions:
Heat oven to 375 Degrees.
Lightly coat an 8-inch square baking dish with either vegetable no-stick spray 
or vegetable oil.
Remove excess moisture from Zucchini by patting between paper towels.
In a small skillet heat oil, and sauté onions until tender.
Transfer onions to a large mixing bowl, and add zucchini and remaining 
ingredients, except for the tomato sauce. Mix well.
Pour the zucchini mixture into the greased baking dish.  Spread tomato sauce 
over the top.
Bake 30 Mins.
