PINEAPPLE "RIGHT SIDE UP" CAKE

1 yellow cake mix

1 can crushed pineapple (with juice)

1 cup brown sugar

2 (3 oz) pkg. boxes vanilla pudding

1 (12 oz) Cool Whip

shredded coconut

1. Mix cake as directed.

2. Bake in cookie sheet pan.

3. In a small pot, boil brown sugar and pineapple together for 1 minute.

4. Pour pineapple mixture over cake, hot from oven.

5. Mix pudding as directed on box.

6. Spread over cooled cake.

7. Top with Cool Whip.

8. Sprinkle with coconut.  Enjoy.
