Lamb Chops With Mint Stuffing

1/4 cup chopped onion

1/4 cup chopped celery

1/2 cup butter or margarine

2/3 cup fresh mint leaves, chopped

4 cups white or whole-wheat bread, torn into 3/4 inch pieces

Salt and pepper to taste

1 egg, beaten

8 shoulder blade lamb chops

Saute onion and celery in butter; remove from the heat. Toss with mint and
bread. Season with salt and pepper. Add egg; mix lightly. Place lamb chops
in a greased 13 by 9 by 2 inch baking dish. Top with bread mixture. Bake at
350 degrees for 1 hour.
