Chocolate Plantation Cake 1/2 cup margarine
1 1/4 cups sugar 2 eggs 2 (1 ounce) squares bitter-sweet chocolate, melted 1 3/4 cups all-purpose flour 1 teaspoon baking soda Salt to taste, optional 1 cup buttermilk Vanilla to taste Mocha Frosting: 1/3 cup margarine 4 cups sifted powdered sugar 3 1/2 tablespoons cocoa 3/4 teaspoon salt, optional 1/2 cup strong coffee 1 teaspoon vanilla Slivered almonds Cinnamon red hearts, optional Cream margarine with sugar until light; beat in salt, if desired, vanilla and eggs. Stir in chocolate. Sift together dry ingredients; add to creamed mixture alternately with buttermilk. Pour into 2 greased 8 inch round cake pans. Bake at 350 degrees for 30 to 35 minutes. Cool. For frosting, cream margarine until light. Sift together powdered sugar, cocoa and salt, if desired. Gradually add to margarine with coffee. Beat until of desired spreading consistency. Spread between layers and top of cake; sprinkle with almonds and cinnamon red hearts, if desired. Makes 10 to 12 servings. Enjoy.
