PUDDING CAKE

1 pkg. yellow cake mix, single layer size
1 egg
water
1/2 tsp. lemon extract
1 pkg. vanilla pudding; regular
1 1/2 cups milk
1 tsp. vanilla
1 can chocolate frosting

Prepare cake mix using egg, water, lemon extract, following label
directions.  Pour into a greased, floured 8 inch round cake pan, (9 inch is
too large, causes cake to be too flat).  Bake at 350 for time indicated on
cake pkg., or until center of cake springs back when lightly touched.  Cool
cake in pan on rack 10 minutes.  Remove from pan, cool completely.  Prepare
pudding mix with milk, vanilla, cook according to pkg. directions.  Cover
with plastic wrap to prevent skin from forming on top, cool completely.
Split layer cake, fill with cooled vanilla pudding, put cake back together,
then frost with enough chocolate frosting to cover top.  Store in
refrigerator.
