Blueberry Yogurt Muffins 1 egg
1 cup yogurt (lemon, vanilla or honey-flavored) 3 tablespoons melted margarine 2 1/2 cups biscuit baking mix 1 cup blueberries In medium bowl, lightly beat egg; gently blend in yogurt and margarine. Add baking mix; stir just until well moistened. Stir in blueberries. Fill 12 greased or paper-lined muffin cups two-thirds full. Bake in preheated 400 degree oven for 15 minutes, or until lightly browned. Immediately remove from pan. Serve hot. Makes 12 muffins.
