I have a pan with an insert but before that I used to place it on two slices
of bread for the bread to soak of the Greece but a rack is a great idea too!

I cook my meatloaf on a rack to allow for the meat to not be sitting in it's

Simple meatloaf with maple glaze recipe:
1 LB Lean Ground Chuck
1 egg
1 medium onion diced
2 tbsp milk or half and half (skim milk is a healthy option)
1 quarter cup finely crumbled whole wheat crackers
2 slices of bread (cuts down on the Greece)  Spices are optional:
I use a dash of whatever I have on hand but I prefer McCormick Smoke house
maple seasoning Peppercorn medley and a pinch of McCormick Chipotle bacon
seasoning
Glaze:
3/4 cup Maple syrup
1/4 cup brown sugar (There's a Splenda brown sugar substitute you can use if
you prefer.
Directions:
Beat the egg and milk / half and half and set aside In a bowl mix together
the meat and spices and add the milk / egg mixture.
Mix thoroughly and add in the cracker crumbs In a bowl mix together the
syrup and brown sugar until blended If you have a meat loaf pan with pan
insert for draining fat the two slices of bread are not needed In a pan put
the two slices of bread on the bottom Form the meat mixture into a loaf and
place on the bread Pour the glaze over the top and sides of the meat loaf
Preheat oven to 350 and cover the meatloaf and bake for 50 minutes Uncover
and turn oven to 400 and bake an additional 10 to 15 minutes until glaze
forms a nice crust.
Remove meatloaf slice and enjoy.
Discard sliced bread.
Tip:  I also like to wrap maple peppered bacon around my meat loaf, after
drizzling the glaze on it.
