Just made this for dinner tonight!

Easy and Delicious!

It fed Candace and I and there was enough left over for lunch tomorrow!


Potato Soup

One potato, two potato, five potato soup! Easy, flavorful, creamy potato soup is just five potatoes away.

Ingredients
2 1/2 cups water
5 medium potatoes, peeled and cut up
1/4 cup water
1 cup milk
1 1/2 teaspoon salt
1/4 teaspoon white pepper
2 green onions, thinly sliced
Optional:
4 slices bacon, fried crispy and crumbled
1 cup cheddar cheese; grated
Sour cream
Steps
1 Heat 2 1/2 cups water to boiling in 3-quart saucepan.
Add potatoes. Cover and heat to boiling; reduce heat.
Simmer about 20 minutes or until potatoes are tender.
2 Use potato masher to coarsely mash potatoes in pot...leave some bigger pieces of potato.

Add 1/4 cup water.
3 Stir in remaining ingredients;

heat over medium heat, stirring occasionally, until hot.
Serve with Bacon, Cheese and Sour Cream for garnish

Or add bacon and cheese to soup making a baked potato soup and serve the Sour Cream as a garnish!

** Add some fun to your garnish, spoon some sour cream into a sealed plastic food-storage bag. Cut off one tiny corner of the bag, and squeeze squiggles of sour cream
onto servings of soup.

I used kitchen shears to quickly cut up the bacon instead of crumbling it!
