When measuring for baking, the normal way sighted chefs do it is with a
scale and they know the standard weights that would fit in a measuring
cup so they can check their work.  When I put flour or coffee in a
measuring cup, I dip the clean measuring cup in the flour or coffee and
turn it right side up and keep it in the bag or container until I can
run my finger across the top of the cup and sweep any excess back into
the container or bag.
