Pour it into the indicated cup/measuring spoon that is in turn itself over a bigger cup or bowl and pour the excess back in to whatever that substance was in with the help of something like a funnel. That or store things wherever you can in containers/receptacles where you can scoop stuff out of and just flatten off the top and in general become better at pouring/measuring out stuff with the least amount of spillage wherever possible.
