Sugar’s Chicken Soup with Hominy

 

1 lg already cooked roasted chicken shredded

2 can diced tomatoes, fire roasted garlic and basil flavor

16 ounce low sodium chicken broth or to desired taste

Water to your liking

1 chopped green bell pepper

4 sticks of chopped celery

½ red onion diced

Shredded green cabbage to your liking

2 cups of chopped carrots or desired

2 teaspoons garlic powder

2 teaspoon Knorswisa Chicken bouillon

1 teaspoon chili powder 

1 tea spoon olive oil

16 ounce white hominy drained

Mexican Cheese

Avocado slices

Corn tortillas

Lemon

In a large Pot add about 16 ounce of water then add carrots.

In a separate pan Sautee onions and bell peppers with a little olive oil and 
after 5 minutes over medium heat transfer in to pot of water with carrots.

Meanwhile place both cans of diced tomatoes with liquid in pot and the chicken 
broth as well.

Add the chicken bouillon

Let simmer for about 15 minutes or so till you like the flavor of liquid, 
adding more seasonings if you want.

Once chicken is shredded, add in to pot with the rest of the ingredients.

Let cook for about 20 minutes then add the entire can of hominy drained and let 
simmer for another 20 minutes. Add the shredded cabbage last if you wish or 
serve on top of soup.

Top off with cheese, avocado slices and with a squeeze of lemon to taste

Warm up corn tortillas.

Enjoy.
