Hi Jennifer,
Well first, pineapple is really sweet so you should be careful, as most fruits, 
they are loaded with natural sugar so always be careful of how much fruit and 
amount you eat.
If you don't want to use pineaple, just go ith out, or substitute with any of 
your favorite fruit (fresh fruit, not juice) like cheery, strawbeery, peach 
even mano Something that will go with he original fruit.

DIABETIC RHUBARB JAM

 

5 c. rhubarb, cut in sm. pieces
1 c. crushed pineapple

Mix rhubarb and pineapple together and bring to a boil, stirring constantly, to 
avoid sticking, for about 12 minutes or until the rhubarb is completely cooked. 
Remove from heat and add: 10-12 pkg. Equal sweetener

Refrigerate overnight and then place in freezer until needed.  Enjoy.
