For a 3-10 helix, you will have to add the bond restraints one by one:
Extensions -> Modules -> User Defined Restraints -> Restraints -> Add Distance

or use ProSMART to generate restraints over your atom selection - they can then be imported into Coot using
"Read Refmac Extra Restraints"
