If the temp is much over 180, the oil pressure falls pretty quickly. Check your cooling baffles. If you still have a problem, take a look at the pressure bypass valve. Sometimes they get a bit of dirt in that causes then to stick open. Sometimes you can shim them a little, but usually that's not the problem. If none of these are your problem, then you need to look at the pump itself, and then the bottom end.
