----[Please read http://ercoupers.com/disclaimer.htm before following any advice in this forum.]---- Your fuel pump is keeping the header tank full right up till you shut off the engine. Any excess in the header tank will drain through the overflow back to the wing tanks. Unless you run the wing tanks dry, you should never need to add fuel to the header tank. If you DO run the wing tanks dry, be sure you fill the header tank first, then fill the uphill wing tank next and finally the downhill wing tank. This method may prevent drain-down/drain-across overflow from the lowest tank. If there's a lot of slope to the fueling area, be very careful to not fill the uphill tank all the way full. Should the wing tanks be filled and not the header? Is it a good idea to keep the tanks filled after each flight?
