It's a good idea to refill the tanks after each flight in any airplane. More fuel in the tanks means less air in the tanks, therefore less moisture to condense on the bare metal. In an Ercoupe it doesn't matter which wing tank is filled first, since there is a crossover pipe between the two wing tanks. There is no reason to fill the header tank unless you've almost emptied it during your flight, which is not a good idea. If you do put fuel in the header tank after you fill the wing tanks you will probably overflow the wing tanks, due to the overflow pipe in the top portion of the header tank, which empties into the wing tanks.
