In addition to what Steve Dold said, I would add that you
have changed the cooling method from what was designed. You
could very well be messing up the engine by making some
cylinders run too hot and others too cold with your change -
oil temperature is an average for the engine. Perhaps you
are just cooling the oil sump but cooking the cylinders.
Without instrumenting all cylinders with CHT and EGT, it's
impossible to say what you have done. My engine never runs
over 180 in the hottest weather with standard baffling.

Have you checked calibration of the gauge and bulb?
