The hot-running is the symptom of some problem, like bad baffling, 
excessive blow-by, lean operation, that sort of thing.

Have you done all the obvious stuff like checking baffling and 
the mixture control?  

Does your oil turn black after only a few hours (like 4 or so)?
Do you burn a lot of oil?

Our engine had a tendency to run hot, sometimes even right to the redline.
Lots of well-meaning folks told me it was acceptable, and that some 
engine installations are "just that way".  Well, when I put new cylinders
in, it corrected the problem, I assume by eliminating the blowby.  It 
now rarely goes above 180 degrees.

Part of the problem was also a binding mixture cable, which made 
the endine run somewhat lean.

Don't let anyone tell you that running near redline is normal.  It isn't.
