I don't usually figure in the center tank either.
It gives you an edge you can keep your eye on.

But, as a 'fright' instructor, you
might not want to get called up on the FAA red carpet to answer why your
student ran out of gas. The FAA can be a terribly unforgiving
bunch....... Especially, if you make $$$$$$ with a license. These doods
carry a BIG stick.
I think Steve has the right idea at 6 gph for his
fledgling baby birds. Erring on the side of caution is what needs to be
demonstrated. Call it CYA, if nothing else.
BTW... My 85 hp Coupe
uses more than 5 gph since I use 75% power and run slightly rich PLUS the
climb to altitude fuel burn. It's a TLC treatment my exhaust valves seem to
enjoy.
I won't mention if Marvel Mystery Oil is in the gas.

BTW... Just fer grins: Flying an 0-200 Coupe at 63.75%
power and a C-85 at 75%, yield similar performance numbers.
Figures
can lie and liars can figure, but hopefully NOT much in this case.
