Messages do not jump between folders all by themselves.

When I use thunderbird, it deleted mail still goes to "Trash"

That's because Thunderbird sends the command to move deleted messages into the Trash folder.

Is there something else I need to do? Any help would be greatly appreciated. thanks.

I'm a newbie to courier and probably just missed something simple.

This has nothing to do with Courier. You need to configure your IMAP client correctly.
