For help on configuring your syslog daemon, see "man syslog.conf" or join a Unix admin mailing list. courier-imap logs most messages at mail.info and higher, and some at mail.debug. If you want to see the mail.debug messages (which include authdaemond startup) then you'll probably need to modify your syslog configuration. imapd and pop3d do not actually start until an incoming connection arrives. Before then, only couriertcpd is running, listening for the connection.
