Telnet to port 110 or 143, and issue the POP3 or IMAP commands directly, as
shown at http://www.courier-mta.org/authlib/README.authdebug.html
(for pop3, use 'retr 1' to retrieve the first message in the inbox)

Also:

(1) use

   # tcpdump -i eth0 -n -s0 -A tcp port 110 or tcp port 143

to see the pop3/imap commands and responses on-the-wire.

(2) you can get command logging for IMAP by setting IMAPDEBUGFILE=debug.txt
in the imapd config file, and then debug.txt will be created within the
maildir.
