You could sync them in a round-robin way: e.g. to sync them all once an hour
you only have to sync one mailbox every 7 seconds. That shouldn't be too
heavy.

Of course you will need to have all the (unencrypted) passwords to hand,
unless you frig the imap server to have a 'master' password which can log
into any mailbox.

Equally, you could just rsync each mailbox in turn. The advantage of syncing
at the imap protocol level is that, in theory, changes made at either side
should replicate to the other side.
