It's not so bad. Read the instructions on http://courier-mta.org and build the RPMs with: rpm -ta courier{version-number}.tar.gz as a normal user, making sure that the user in question has read/write privileges to /usr/src/redhat (or build a similar tree in the user home directory, and set the environment accordingly for rpm).
