I rsync once a day to a remote machine. Since my primary server has a 
monthly bandwidth cap, I use this second machine to rsync to a third and
fourth machine. The machines are geographically distributed, so the mail
will survive natural disasters (earthquake, flood, etc). The whole thing
is cronned so there's no admin overhead except in the event of mail 
restoration, which consists simply of performing the rsync in reverse. 
Though I don't do it personally, rsync could also be used locally on each
machine to keep snapshots of the maildirs as they existed at various times
in the past.

FWIW, I back up the web content of virtual hosts using the same method.
